Long pasta pairs beautifully with light sauces, while ridged or hollow shapes are perfect for holding rich, hearty ragùs. In this course, you’ll learn how to make fresh, hand-rolled pasta while discovering the origins of these unique shapes and the sauces that complement them. By shaping pappardelle, tagliatelle, and farfalle, you’ll understand why pasta is one of Italy’s greatest prides!
