                            Mexico is a relatively young country, yet the ancient Aztec and Maya civilizations thrived here for millennia, leaving us with a rich gastronomic heritage. Tomatoes, corn, potatoes, chili peppers, avocado, cocoa, chocolate – just to name a few. Tonight, we pay homage to the pre-Hispanic, ancient Mexican cuisine, using these ingredients to create a splendid menu.
